Raw Super Food Raspberry Energy Bars 🌸

Happy Friday my beautiful souls!
Spent this afternoon making energy bars for my family. This is their favorite go to snack pre and post workout. These bars are #rawvegan , #glutenfree and #refinedsugarfree . They are packed with energy boosting superfoods like chia, nuts, and dates.
Not to mention they are so wickedly delicious! Once you know how to make them, you won't buy store bought bars again! So without any further ado, I present you with the easy peasy recipe:
Raw Super Food Raspberry Bars
1 1/3 cup of pitted dates
1 cup of raw almonds
1/2 cup of rolled oats
1 cup pumpkin seeds
1/3 cup coconut flakes
1/3 cup chia seeds
1/3 cup hemp seeds
1 tbs of rose water optional
2 tablespoons of melted coconut oil optional
1 tbsp of pure maple syrup optional
Blend the above ingredients in a food processor until it forms a dough like consistency. Line a cookie sheet with a parchment paper and transfer the mix on to the sheet. Roll the mixture until its completely flat, about 1/2 an inch thick. Press on 1/2 cup of crushed freeze dry raspberries on top of bars. I used Trader Joe's freeze dry. And sprinkle with coconut flakes. Press on to make sure it sticks to the top. Cover with a plastic wrap and keep it in the freezer for 20 min. Take the bars out and cut in squares. They are ready to eat. You can keep the bars in the fridge for up to 2 weeks or freeze them in an air tight container for about 6 months. Great on the go or pre/post workout snack.
